This vacuum pump can only remove 2/3 of the oxygen, so the remaining 1/3 of the oxygen remains in the bottle to destroy the wine. But when you use this device to remove the oxygen from the wine, you are also taking away the sulfur dioxide that winemakers have added to keep the oxygen from destroying the wine. In this way, the remaining 1/3 of the oxygen will still destroy the wine, and the wine is now more vulnerable than before due to the antioxidants being drawn away.
